A convenient meal prep plan featuring savory breakfast burritos packed with roasted sweet potatoes, eggs, and beans, alongside easy no-bake protein balls for a healthy snack.
For the Breakfast Burritos:
1. Chop 4 Japanese sweet potatoes and 2 green bell peppers. Coat them in salt, pepper, and oil.
2. Roast the vegetables at 400F for 25-35 minutes.
3. Scramble 14 eggs with some salt, pepper, and hot sauce (Tapatio).
4. Cook 1 can of black beans with 1 jalapeño, 0.5 onion, and various spices.
5. Assemble the burritos with the roasted vegetables, scrambled eggs, shredded cheese, and cooked black beans.
6. Roll the burritos up tightly and wrap them tightly in parchment paper, then tinfoil, for freezing.
For the Chunky Monkey Protein Balls:
1. Combine peanut butter (or any nut butter), raw honey (or maple syrup), mashed ripe banana(s), chopped walnuts (or pecans), chopped dark chocolate bar, unflavored collagen peptides, casein powder (or any protein powder), rolled oats, and cacao nibs in a bowl.
2. Mix all ingredients together.
3. Note: If using casein powder, it is recommended to dissolve it in warm water first to achieve a smooth texture. If using whey protein, this step is not necessary.
4. Taste and adjust the quantities of ingredients as necessary until it tastes how you like it.
